Margarine

1. Soften 20g (2 Tbsp.) of solid vegetable fat (I use hydrogenated soybean oil for my prince) in a very small bowl (I use the equivalent of a yogurt container) using the microwave
2. Add 3 tablespoons (30g) of soy oil to the bowl and put the bowl in ice water.
3. Mix the content of the bowl at the lowest speed of the mixer (I use a stick blender).
4. Take the bowl out of the ice water and add 2 teaspoons of seed milk (see recipe on separate page–could use regular milk if allergies aren’t a problem) and 2 teaspoons of egg yolk. Mix until you have a smooth and soft margarine.
5. Add ¼ tsp. salt & a dash of citric acid (could use lemon juice if allergies aren’t a problem). Mix & refrigerate.
