Breading

1 cup oat flour (or wheat flour, if you can have it)
1 tsp. onion salt
1 tsp. garlic salt
1 tsp. paprika (opt.)
(other spices can be added–try basil & oregano on zucchini for an Italian flavor)
You can either use this dry or add enough water to make a thin batter–I prefer to use it dry. It’s less messy & stays on better.
Batter/bread your food of choice (dip in milk or beaten egg first, if you can have them), place on well-greased baking sheet & bake about 45 minutes @ 350F.
I’ve used this breading used on potatoes (for oven fries that don’t stick to the pan!), onion rings & sliced zucchini.

The zucchini (eggplant too) is particularly good with spaghetti sauce & cheese melted on top–we used to make mini zucchini or eggplant pizzas.
