Potato Puffs

Mix:
2 cups mashed potato, seasoned to your liking with garlic & onion salt (I added seed milk for creaminess, but you could use regular milk if you can have dairy). Cheese would be good too, if you can have it.
1 beaten egg
1/2-1 cup flour (I used oat flour)
Pour enough cooking oil into a pan to form a shallow pool (more than greasing the pan, but not really deep-frying either).
Drop spoonfuls of the potato mixture into the hot grease & fry until golden brown. Flip & fry the other side until it’s golden brown. Serve at once.
