Sausage Seasoning

Makes ground pork or beef taste like breakfast sausage–good on pizza!

For 1 lb. ground beef and/or pork:
½ tsp. sage
½ tsp. salt
1/8 tsp. (scant) cayenne
1/8 tsp. nutmeg (optional)
¼ tsp. onion (optional)
1/8 tsp. garlic (optional)
1/12 tsp. black pepper (optional)
& a splash of cider vinegar (optional)
For Italian sausage, add fennel to taste
