Broiled Zucchini

Mix: ½ cup oat flour (put oatmeal through the blender–or use regular flour if you can have it)
a dash each: cayenne, onion salt, oregano and garlic salt
Slice a zucchini ¼” thick, dip in beaten egg, coat with flour mixture & arrange on lightly greased baking sheet
Broil 5-10 minutes, or until lightly browned.

If you can have it, this is really best topped with tomato (fresh tomato, pizza sauce, spaghetti sauce, etc.) & cheese for zucchini pizzas!

If you’re in a hurry, just arrange zucchini slices on a greased pan, sprinkle with seasoned flour or crumbs (I’ve put the mix in an old Parmesan cheese container & used that to sprinkle), spray lightly with cooking oil & broil.
